I always admire American cooks because they get level cups without thinking about it. If you struggle with this, then a pair of digital scales are a life changer!
All my cookery is a bit ‘ish’ because there is no such thing as a standard egg (or a standard hen, come to that!) You know what you’re doing though so be guided by your eyes. Looking too sloppy? Add a bit more flour. Won’t hold together enough to roll out? Add a bit of liquid. I usually use milk, and I find full fat gives the best results and so does butter. After all, we all know that cake isn’t healthy, so we might as well make our occasional treats as luxurious as we can, mightn’t we?
